        it is just 2 cups white rice with 2.25 cups water with addedcan of diced tomato, can of sliced olives, diced carrots and celery, salt, pepper, and some ground coriander seed cooked for 4 minutes in the pressure cooker

    I definitely need a good beans and rice recipe in my life. I’ve tried so many but the consistency in that photo looks perfect.

    Care to share?

    Also i make some pickled red onion and put them on top. I am not sure where I got that idea but it breaks up the flavor a bit!

      These are pretty simple, I usually cook plain beans in the morning then use them later in the day but this was a can. I just simmered black beans with some chopped carrots, tomato paste and home made seasoning I make from whole spices. I simmered until everything is soft then I hit it with my immersion blender stick until it was “half smooth”. Sometimes I just use a fork or leave it clumpy. My partner is allergic to alliums, otherwise I’d have added onions and garlic to it. I don’t use oil.

    I would be happy to have beans and rice for lunch every day for an indefinite amount of time. They’re just… so…
