For me, it is any city/building construction game like City Skylines, Two Point Hospital, Planet Zoo etc.

Starcraft 2. I’ve accepted that I’ll never being good at this game so I’ll watch uthermal do challenges instead. Factory games. Usually watch play throughs when I get stuck and/or get to a point where my designs can’t scale without a lot of headache.
